Last month, I started doing a column for my friend, Kevin’s blog – The Mighty Rib. My column, called Higher Learning, aims to help cooks up their food IQ by utilizing more advanced techniques to yield spectacular results.

Hopefully you tried out last month’s recipe – the roasted beef tenderloin with ancho-red pepper sauce. This month, I’ve prepared some braised beef shoulder with sunchoke puree and a daikon gremolata.

This month, I went for something that was braised, as I believe it’s the best technique during the colder winter months. So hop on over to The Mighty Rib, try out the recipe, and give Kevin’s blog some love.
